Honey - Pecan Chicken


Honey - Pecan Chicken
My apologies for not posting I was having an issue with uploading pictures, a call to Apple and we are all set... Since I am back on Weight Watchers I am trying to cook healthier and watch my points. I saw this recipe from Dotty's Weight Loss Zone, great Website to get recipes and see point values for things. 
While cooking this dish Anthony said what is all this what are you making, I said, "Honey - Pecan Chicken". He said that sounds good, well we sat down to eat and I was digging in right away, it was really moist and the Honey with the Pecans tasted so good!! Anthony also approved!! He liked it a lot and we will keep it in the recipe book!! Enjoy!

Ingredients 
1/3 +2 tsp bread crumbs
4 Thinly sliced chicken cutlets
2 tbsp flour
1 egg lightly beaten
2 tbsp canola oil
3/4 oz. chopped pecans
1/2 cup chicken broth
2 tbsp. honey
1 tbsp. lemon juice
1 tsp. minced fresh parsley
1/2 tsp. cornstarch
1/8 tsp. grated orange peel
1/8 tsp. salt
Dash of pepper

Method
Cover chicken in flour, dip in beaten egg, and then coat both sides wit the bread crumbs.
Saute the chicken in oil, turning once, 3-4 minutes per side. (Or Until the chicken is cooked).
Remove chicken to serving platter and keep warm. 
In same skillet saute the pecans until lightly toasted (1-2 minutes)
In small bowl combine remaining ingredients, stirring to dissolve cornstarch
Add liquid to pecans in the skillet and stirring constantly, bring to a boil. 
Simmer 4-5 minutes until mixture thickens. 
Pour over chicken and serve immediately. 

8 WW points per piece.

Golden Green Bean Casserole

Our local Grocery store is called Publix, everyday they have a lady who cooks different food, called  "Apron's Simple Meals", they have all the food that you need to make that recipe right there next to the lady so it is quick and simple for you. I got this recipe from that, my soon to be mother in law told me that they made it and it was really good, they next day I went in and they were making it again...so here it is. I have made it twice so far and it is really good. I am making it this week again for a work pot luck lunch/division meeting. 

Golden Green Bean Casserole
Publix Apron's Simple Meals


Ingredients:
1 (12 oz.) bag frozen microwaveable who green beans
1 cup fresh pre-diced onions
1 (10 oz.) can golden mushroom soup
3/4 shredded sharp cheddar cheese
3/4 cups French - Fried Onion rings

Method:
Pre - heat the oven to 375 degrees, microwave beans in package on HIGH for 4-5 minutes or until hot. 
Transfer beans to medium bowl
Stir in fresh onions and soup until blended. 
Transfer mixture to 2 quart baking dish.
Top evenly with cheese and then onion rings. ( I use a little more that the 3/4 cup...)
Bake 10-15 minutes or until cheese is melting, top is browning and or is bubbling on edges of the dish.

Corn Casserole

This recipe is a good one! It is a corn casserole that I grew up with, my mom always made it and it is a favorite of mine, I love corn and cheese! The recipe is from my Grandma "Mac", my mom's mom. It is easy to make and tastes great! (Goes good with the chili...)

Corn Casserole
Ruth McCaslin - (Grandma "Mac")



Ingredients:
1 package of jiffy corn mix
1 can of cream style corn
1 can of kernel corn (drained)
1 melted stick of butter
1 cup (16 oz) of Sour Cream
1 cup mozzarella cheese

Method:
Pre - heat oven to 350 degrees
Mix all of the Ingredients together in a bowl. (Keep cheese separate)
Place in a 10" baking dish, greased. 
Place in oven for about 45  minutes to 55 minutes, then add the 1 cup mozzarella cheese on top. Keep in oven about 5 more minutes. (Until Cheese is melted)
Then place on rack and let cool for about 15 minutes and serve.

Slow-Cooked Chili

I got this recipe from AllRecipes.com  I was looking for a good chili recipe, since the weather is getting cooler here, the house smelled great all day and it came out really yummy!

Slow-Cooked Chili

Ingredients:
2 pounds lean ground beef
2 (16 oz) cans of kidney beans, rinsed and drained
2 (14.5 oz) cans diced tomatoes, undrained
1 (8 oz) can tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons salt
2 teaspoons pepper
Shredded Cheddar cheese and Sour Cream (Garnish for top if wanted)

Method:
In a skillet, cook beef over medium heat until no longer pink, drain and transfer to slow cooker. Add the other ingredients on top of meat. Cover and cook on low for 8 - 10 hours or on high for 4 hours. Garnish individual servings with cheese and sour cream if desired.

Well I am starting a new blog! Since I am finding myself being more "domestic" and trying to find yummy dinner dishes for us to try in our new home, I thought why not share them and take pictures while I am cooking! So tonight I will upload the first dish...Slow Cooked Chili! Hope you enjoy!
